Trying Out the Smoothie Bowl Trend: It’s Weird, But Yum!

Have you seen the drool worthy photos on Instagram and Pinterest (where we are already following each other, right?) of smoothie bowls? I’ve been pinning them for months but decided to finally try to make one today once I saw that a new cookbook that had been sent my way had quite a few smoothie bowl offerings.

My first attempt is not as colorful as many of the examples I’ve seen, but I will say this: it was DELICIOUS!!

Want to learn how to make it? I picked it because I had everything but the kiwi on hand and I needed to run to the store anyway to pick up a few other things. I can’t wait to try some of the other smoothie bowl ideas!

Goji and Raspberry Smoothie Bowl with Muesli Topping

from 300 Best Blender Recipes Using Your Vitamix, by Robin Asbell

  • 1 cup unsweetened almond milk
  • 1/4 cup dried goji berries, soaked and drained*
  • 1 large frozen banana
  • 1 cup frozen raspberries
  • 1 large kiwi, peeled and sliced
  • 1/2 cup muesli
  • 1/4 cup chopped walnuts

*soak the berries in about 1/2 cup of water and let them sit for about an hour. Pour off the excess water when you are ready to use them.

To your blender add the first 4 ingredients and blend until smooth. Add blender ingredients to a bowl, and then top with kiwi, muesli and walnuts. Enjoy immediately!

The smoothie bowl concept takes a minute or two to get used to, I have to say, but having those yummy and crunchier items on top helped it all make sense and not just feel like I was eating a smoothie with a spoon. 🙂

As for the cookbook, I’m really impressed with the wide variety of recipes inside (I definitely assumed it would be 100% smoothies and that is not the case). I highly recommend it for anyone with a Vitamix (I think anyone with a blender at all can benefit from it, but recipe instructions to discuss specific settings on the Vitamix to use)
