In our house, we have learned to reach for olive oil when we do the majority of our cooking. It is a MUCH healthier choice than butter, and even than most other liquid oils, because it is chock full of the “good” fat! We actually use extra light tasting olive oil so that we can use it in a wider range of dishes.
Because we use extra light tasting olive oil, I sometimes forget the wonderful flavor that other types of olive oil really have.
