Yummy Super Bowl Face-Off: Buffalo Chicken and Bacon Wedge Salad with Naturally Fresh Bleu Cheese Dressing

You know, I’m not very interested in “the BIG game” that gets played in a few weeks’ time. I am VERY interested, however, in the commercials, the fun half-time show, and most of all, the food. Super Bowl food is all about going big or going home. It’s a fun opportunity to take your dishes to the extreme in the flavor department.

One of the most popular Super Bowl menu items is buffalo chicken wings. I have a confession to make about this particular dish: I only like it a little bit. As in, if someone else made chicken wings I would eat 1 or maybe 2, and the part I would enjoy the very most would be that awesome bleu cheese dressing. Most wings are just too hot for me to handle, and too messy for me, as well.

But when I learned that Naturally Fresh® had a lite bleu cheese dressing available, I honestly couldn’t stop thinking about it. I wanted to try it, and I wanted to create some sort of a recipe where the bleu cheese dressing could justifiably be eaten in large quantities. (What?! Don’t judge me until you’ve tried it!). So I knew that I needed to revisit the buffalo chicken wing issue and bring some heat to the table in a new way.

Ingredients

  • 1 1/2 lb bone-in chicken thighs
  • 1/3 cup hot sauce of your choice
  • 4 Tbsp butter
  • 1 Tbsp vinegar (white or go wild like me and use apple cider)
  • 1 tsp garlic salt
  • 1/4 tsp pepper
  • 1/4 tsp Worcestershire sauce
  • 1 head iceburg lettuce
  • 1 tomato
  • 1 package bacon
  • 1 jar Naturally Fresh Lite Bleu Cheese Dressing

In a slow cooker, add hot sauce, butter, vinegar, garlic salt, pepper, Worcestershire sauce and chicken wings. Place the slow cooker on low for 5 1/2 hours. After 1 hour, briefly open up the slow cooker and give the contents a good stir so that the sauce gets coated on the chicken. Return the lid and resume the slow cooking process.

Meanwhile, cook the package of bacon in whatever way you prefer to cook it. My style is to line 2 baking pans with foil, add the bacon, and cook them for 15-20 minutes (start watching at minute 15) at 400 degrees. After it cools down a bit it should be easy to crumble (you can always cut them up with kitchen shears!).

When the chicken is nearly done cooking, prepare your salad wedges. Simply cut your head of lettuce in half, and then cut each half again.

Now take your cooked chicken out of the slow cooker. Careful, as it is going to just fall off the bone. You want to remove any obvious bits of fat that remain, and of course remove all the bones. Shred the meat by using two forks. It will be easy-peasy. I recommend leaving the shredded chicken out of the slow cooker, but adding back to it approximately 1/4 cup of the sauce it cooked it to help ramp up the flavor a bit. You want moist, but not sopping wet shredded chicken.

Now it’s time to put it all together!

Simply place a wedge on your plate, and then generously drizzle it with that yummy Naturally Fresh Lite Bleu Cheese dressing. Look at those delicious chunks!

Add your tomatoes and your bacon, and then put the buffalo chicken around the edge. This makes it easy to grab a hunk of buffalo chicken each time you cut into your salad and take a bite.

While it takes a while to make the chicken, it is pretty much effortless and the end result is well worth it. I thought the chicken had some heat, but it wasn’t as intense as more traditional buffalo chicken wings. But the marriage between the flavor it had and the Naturally Fresh Lite Bleu Cheese dressing was perfect in every way! I ate this exact meal 3 times in a row after making it because I loved it so much! I probably would have kept going, but I ran out of wedges! 🙁

If you haven’t tried Naturally Fresh products yet, you are really in for a treat. These products are free of artificial flavors, colors or preservatives. They also leave out MSG and artificial thickeners. Truly they have captured the flavor of great, homemade dressings! And if you are wondering if the lite version of the bleu cheese is lacking (as lite dressings sometimes are) I can tell you that it doesn’t taste lite at all. The company uses a nonfat buttermilk to achieve that rich flavor without as many calories.

In addition to Bleu Cheese and Lite Bleu Chesse, the company also offers a Ranch and brad new to the scene this month, Lite Ranch (half the calories of the original!). You can find these products in the refrigerated section of the store at Kroger and Publix.

Finding Christmas Gifts for Those with Dementia and Alzheimer’s Disease

I live 5 1/2 hours by car away from my father. The distance never really seemed overwhelming until last year when he was diagnosed with dementia. I spent the better part of the last year in the first stage of grief: denial. I think I was able to stay in that stage for so long simply because I was so far away from him. When we chatted on the phone, I sometimes caught him when he was having a rough day with his memory, but I would also often catch him when he was doing just fine.

I was fueled by those “just fine” conversations, and decided that anything else was a tiny little blip. But the tables have turned, especially in the last two months, and now the “just fine” conversations are the blips, and the “not so good” conversations are becoming more normal. We spent Thanksgiving with my father, and I was so sad to hear him ask, the morning after our holiday feast, if Thanksgiving had already happened or not. He honestly just couldn’t remember.

Dementia is some heavy stuff, you guys, and I promise I’m not trying to bum you out. But there are hundreds of thousands of people who are very close to someone battling dementia, and Alzheimer’s Disease as well. And it’s a battle with a known outcome. Our loved ones aren’t going to win. Kind of puts a damper on holiday shopping for them, not gonna lie.

Honoring the Wishes of a Loved One with Dementia

My father is steadfast in his desire to lead an independent life for as long as possible. We are working very hard (my older brother, in particular) to honor this wish for as long as possible, keeping in mind that we have to keep him safe at the same time. So this year I’m looking for a few gifts for him that might help him feel independent in some way. One of the gifts that I’m most excited about is the VTech CareLine Telephone System.

For me the BIG standout is that the primary phone set, as well as the accessory handset have large photo spaces so that the person using it can just push the picture of the person that need to call. Very simple, very effective.

Additionally, there’s a portable safety pendant that can be worn around the neck or clipped to your waistband, and it has speed-dial capabilities. You guys, this is HUGE to me. My father fell in his home a month ago and just laid there for who knows how long (sounds like 3o minutes or more) before he had the strength to get back up. If he had been wearing a device like this, he could have gotten immediate help.

Honestly, it’s issues like my father falling that make me the most nervous about him being home by himself. The day is going to come when he is going to need to transition to some sort of assisted care situation. But devices like the VTech CareLine Telephone System can help make that time a little bit further away. And since my father wants his independence more than anything else, I’ll do anything I can to help him get it.

If your loved one doesn’t like to answer the phone if they don’t know who it is, or if they are even in a different room when the phone rings, another great feature is that the Caller ID announces who is calling. It can go up to 40 decibels, so if hearing impairment is an issue, it can be addressed. The device is also hearing aid compatible and has a low battery indicator so that it can be recharged before it runs out of energy.

Finally, I am very appreciative of the fact that here are no third parties involved in order to make full use of the CareLine. That means there are monthly monitoring fees, installation costs, contracts, or any of that stuff. The costs are kept reasonable for that peace of mind that people in my situation are seeking.

There’s so much about dementia that is just plain sad. I’m honestly relieved to have something to put under the tree for my dad that is going to help him feel supported and cared for, and like his wishes are being heard.

For the Train Fans: New Chuggington Characters and a Rockin’ New Adventure Set! (Giveaway!)

Guess what’s rolling into the station, just in time for all the Chuggington fans to add to their holiday wish lists! There’s a great new DVD that includes the debuts of two brand-new Chuggington characters, Payce (the tunner runner from Tootington) and Cormac (the cheeky forklift engine). This collection of five episodes features an extended Chuggington special that premiered on Disney Junior this fall. To have it available on DVD is especially great news for those of us (my family included) who don’t have cable and rely on Netflix instant for most of our children’s programming; we can be a little bit behind on getting to see cool specials like this one.

4 Easy Holiday Traditions My Kids Love

Friends, I know your Halloween decorations are still up, and likely will be for a few more days (ok, until next weekend). But there’s no denying that we are all starting to turn our attention toward the Christmas season. November feels like a brisk walk toward the most wonderful time of year, and December is a full-on sprint. Personally, I’m dousing myself in all things peppermint and primed to get this party started!

If you have little ones at home, you have likely wondered what holiday traditions will become important to your family, and in particular, if you’d like to start any new traditions. But it can be overwhelming to try to figure all of that out! I’d like to share with you 4 traditions my family has adapted over the past few years. Two of them are brand new to us this year! These are all traditions that are friendly to the family with a lack of crafting skills. Just gonna put that out there, because there are lots of other great ideas that just aren’t ever going to happen in my home (Gingerbread house, anyone? The mere thought of it makes me sweat!). I hope you find some fun ideas for your crew!

Tradition #1: Christmas Countdown Chain

Yes, this is is a craft, but it simply involves cutting strips of paper and applying a dot of glue. That’s within the boundaries of what I can

reasonably handle. 🙂 We create this chain, little by little, throughout the month of November, with the goal of having it ready to go by the day after Thanksgiving, as that’s when the countdown begin. Each loop on the chain has a special message on the inside with some sort of holiday fun item that we will accomplish that day. There’s no need to over-think this, friends, and no need to do something spectacular or time consuming every day. You’ll want to sprinkle some of those fun events like making cookies in there, but you can also simply have a carol singing session one day, or color a picture for Santa Claus. This takes a bit of thought on the front end, but I have found that it helps us stay in the holiday spirit throughout the season, and it really helps my kids have a better understanding of just how close Christmas is getting!

Tradition #2: Northpole Communicator

This is a new one for us, and we are PUMPED about it! Released just today, you can now find Northpole, brought to you by Hallmark. This Northpole Communicator is such a clever and fun line of products designed to help your family start fun new holiday traditions. The Hallmark Northpole Communicator, which is found exclusively at Walmart, is a very cool device that gives your children the opportunity to talk with the elves at the North Pole throughout the month of December. The device is set to start working on Decmeber 1st, so we haven’t been able to dial in just yet, but the impression I get is that there’s a fun new message every single day, and the chance to leave one of your own! I’ve told Darah that she can start leaving messages on it now, and she’s picked up the communicator at least 3 times today to share some thoughts about her own behavior throughout the year, and to tell on her little sister. I really hope I can catch one of these sessions on camera in the near future, because they are a RIOT!

Tradition #3: Elf on the Shelf

You guys, I know that Pinterest can make the Elf on the Shelf seem really intimidating, as some folks go ALL OUT with the mischief their little elves get into. But let me just tell you: getting our elf (his name is Owen) was one of the smartest moves we’ve made. Last year our oldest was 4, and she was in the full throes of believing in all things magical. She still does believe in magical things this year, but I can already see the sparkle in her eye beginning to fade a touch. She’s starting to ask more questions about how magical things are possible, and you can see the logical part of her mind raising red flags. Owen is going to have another great year with us, though, and if you haven’t taken the leap, just DO IT! This season of life is such a short one, and you will always cherish the memories of your ziplining elf. 🙂

Tradition #4: The Beacon

Here’s another new tradition for us this year. Walmart is the place where you can find the Hallmark Book and Beacon. The book, titled Once Upon a Northpole Christmas, shares a tale about how the Northpole and all of its magic is actually powered by people on Earth spreading laughter, love and holiday cheer. It’s a great reminder to spend time with your family and to do happy and fun things throughout the season. The book comes with a keepsake snowflake ornament that lights up, with the idea being that Santa can easily spot those lighted snowflakes as he makes his rounds. We put both girls’ names on the snowflake since the book only came with one. You could also just put your family name on the snowflake, too, if there are too many kids in your family to fit on the name space area!

My girls were particularly drawn to the idea of having a special snowflake that served as a signaling device for Santa. They both have played with it a great deal and have been giving me ideas about where it should reside during the holiday season. Darah votes for “taping it to the roof.” Ha!

Tips for Family Tailgaiting…Even When You Aren’t a Football Family (Giveaway!)

I was born and raised in Alabama, taught to be a fan of the Crimson Tide before I even knew what football was, and have participated in many a tailgate in my day.

And between us, the only part of it that I ever really cared for was the food.

We are deep into the tailgaiting season, but my family doesn’t have to miss out on the fun of it all just because we aren’t watching a game. We decided this past weekend to take advantage of the absolutely GLORIOUS weather in Chattanooga, and also take advantage of the Bojangles’ Tailgate Special. We loaded up our car with our family and our picnic basket, and let Bojangles’ take care of everything else.

We tried out the 12 piece meal that came with fried chicken, awesome biscuits, iced tea, and 3 sides. It also comes with plates, cups, napkins and sporks so that all you have to do is pick it up and you are ready! Word of advice, though: double check your order before you head out…we were missing cups and sporks which meant we had to swing back by our house because we didn’t notice before we left!.

So…how was the food? It was SO good! Everyone in my family was quiet for the first 10 minutes of our picnic. No words were exchanged other than, “more biscuits, please!”

Everything from full of flavor, and Tim and I both really appreciated the break from the kitchen. It made it really easy for us to have an afternoon of fun together with our girls.

In fact, since we didn’t have to prepare or do dishes after our meal that afternoon, and since we were able to head to the park for a picnic, we were also able to do a quick change while we were there and get into our costumes, as a trick-or-treat event was taking place that evening at the park. We got great spots in the line because we were already there having fun! It was truly a fantastic day, and it was a good reminder to me to really take advantage of those days when the weather is just perfect, and that might mean that you need to leave the meal prep up to someone else. Bojangles’ is a great option, in my opinion!
