How to Make 20 Meals in 1 Afternoon (That Taste GREAT!!!)

One of my favorite things about the slow cooker is that dinner is prepared early in the day and it frees up my mind.  I don’t have to think, “What are we going to have for dinner tonight” all day long.  What is even better than a crockpot meal is a freezer crockpot meal.  All the thinking and prepping is already done.

I love to go to my freezer, pick out a meal, plop it in my slow cooker and turn it on.  This routine is especially appreciated on busy mornings or for busy working parents that won’t get home until 6 pm but still want a home cooked meal.

The prep work and grocery lists and figuring out how to make freezer meals happen can sometimes be totally overwhelming.  That’s why I’ve put together my e-book, From Freezer to Crock to Table.  It provides a grocery list, clear instructions and assembly line-style prep that is super easy to follow.

There are 10 recipes and each one is made 2 times each…you’ll end up
with 20 meals that will fit nicely into your freezer.  Each recipe serves about 4 people.  If you have a large family you may want toput 2 duplicate freezer meals into a large slow cooker.  That way you’ll have enough for 8 people.  I would suggest eating these meals within 3 months for best results.

DIY Dish Soap Uses:Ice Pack for Lunch Boxes (#Palmolive25Ways) (#CBias)

We’ve been talking a lot over the past few weeks about lunch box possibilities for back-to-school. Thanks to Pinterest and Foodie, I’ve put together quite a nice collection of ideas from which to draw inspiration over the coming months. But what to do about those foods that need to stay cold before lunch? Not being able to send those items removes a good chunk of fun foods that my daughter loves (such as yogurt…she is a yogurt connoisseur!). It turns out that the solution is simple and only requires some Palmolive, a bit of rubbing alcohol, and a quart size freezer bag.

Dish Soap Uses: DIY Ice Pack

Palmolive and rubbing alcohol make a beautiful combination for this particular life hack because when they join forces, they will not freeze into a solid block. However, they will make this really cold gel that will be perfectly pliable for sticking in a lunch box, or should you need it for boo boos, for applying to an injury.

Ok, so let’s get started. Do you have your ingredients ready? You need Palmolive Ultra Dish Soap, rubbing alcohol and quart size freezer bags.

Start by measuring out 1 cup of Palmolive Ultra Dish Soap. You can use any color Palmolive that you want to customize it. I went for this snazzy Passion Fruit because of the fun pink color; I knew Darah would love it! And bonus…IT SMELLS AMAZING so I’m more than happy to use the leftovers in the kitchen!

Pour the Palmolive into the quart-size freezer bag. Now add 1/4 cup rubbing alcohol. Using your hands (and NOT a straw…trust me, breathing in alcohol fumes is a bad idea), try to get out as much of the air as possible.

Now give the bag contents a little squishing to get everything mixed up. Then place it inside your freezer laying flat.

Your ice pack will be ready to use in a few hours! When you child brings it home from school in the afternoon, back in the freezer it goes to be ready for you to use the following day.

More Ways to Use Palmolive

The DIY ice pack is such a great alternative use for Palmolive for anyone out there who needs to brown bag a lunch, or who wants to be prepared for when anyone in the house gets bumped or bruised and could use something to help with the swelling. But there are other great ways to use Palmolive that you should check out, too. Be sure to buy at least 3 bottles while you are at Walmart: 1 for your ice pack, 1 for your dishes, and 1 for one of the other #Palmolive25Ways uses you’ll find from the link above! For the Bath and Shower Lovers: Sudsy Box

My husband is a man who doesn’t care too much about gifts, doesn’t have expensive taste, and just isn’t too concerned with stuff, in general.

But he has one item that he is so very dead serious about: his soap. I have asked him on several occasions to help me finish off some shower gel by using it in the shower so that I can get a new one out, and since he is such a nice guy, he usually does it. But he has finally told me, “I REALLY like soap. And I REALLY like nice soap. And I REALLY REALLY REALLY don’t want to use shower gel ever.” For a man who doesn’t put too much thought or concern into trivial matters, I took this to mean that I need to . GET THIS MAN SOME AMAZING SOAP, STAT.

On Being Southern and The Need to Be Ready for Anything

Wherever you might live, I think all parents can agree that it is important to be ready for anything. That means always toting around thinks like snacks, crayons, a spare toy or two and facial tissue. 

But friends, I feel especially strong about the facial tissue matter as a Southern woman, whether my kids need the tissues or not. It seems that every time I turn around I've got yet another reason to reach for a tissue for myself; can any of you identify with thsese particular examples? 

1. Steel Magnolias

I swear, friends, every other week I see a Pinterest pin or a Youtube clip of something hilarious or absolutely heart-wrenching from Steel Magnolias, the cinematic masterpiece that portrays the Southern woman to a T. I'll try to just read the one quote, or watch the one clip, and before I know it, I'm knee deep in Shelby and have to go find my tissues because I look like this:

2. Sweaty Sweet Tea

My poor sweet tea. It just can't help but break out in a sweat in these sweltering Tennessee summer temps. I feel the need to help my beverage out every 20 minutes or so by wiping her off real quick. It's so embarrassing to sweat like that! I'm ever so glad that I don't (if you didn't know, Southern women DON'T sweat. We glisten, and only when absolutely necessary…).

3. Azaleas

There's nothing quite like the sight of a front yard full of beautiful azaleas. But bless their little hearts, they are the death of me.

A trail full of blooms may be picturesque, but it sends me into a sneezing fit of epic proportions. It is CRITICAL that I have some tissues on hand. And I can't very easily carry a whole box of tissues in my purse, even though I might require an entire box before the day's end. Better to have something compact that will still provide me with plenty of tissues to endure all that beauty.

Rachael Ray Helps Me Feed My Family (Including My Cats!) (Giveaway!!)

 Who Doesn’t Love Rachael Ray?

I credit Rachael Ray with being one of the people who taught me how to cook when I was in my early 20s. And if you are wondering just how badly I needed the help, ask Tim, who still likes to remind me about the meal I made served one evening that, among other things, had ground beef, tater tots, and Cheetos in it. It seemed perfectly reasonable at the time, y’all.

Rachael Ray and her totally awesome 30 minute meals have been an inspiration for me. She has such great ideas for getting food on the table fast…and GOOD food, at that (sorry bout ya Cheetos).

Just last week I made a crazy good, crazy easy salmon recipe of hers. It was fresh, flavorful, and colorful to boot!

Now it’s time for the kitties of the house to feel the Rachael Ray love. She has created a line of healthy cat food products called Nutrish for Cats and we recently got to introduce our cats to some of the offerings.

Up first, the easy-to-please newest addition to our family, Rose.

Rose was adopted from McKamey Animal Center a little over a month ago. She came from a hoarding situation, and as a result, we immediately noticed her very strong preference for human food over pet food (she likely had to forage around the house for scraps of whatever she could find). It took about a week, but we got her to start eating pet food, and now she’s pretty happy with whatever we put in her bowl.

Rose got the dry Nutrish for Cats to sample, gave it a sniff, and then had a little snack, right on the spot. Two paws up!

And now for the resident ice queen, Hattie.

Hattie is 12 years old, and we’ve had her for 9 of those years. She is an absolutely beautiful cat, and she’s also quite large! We think she might be part Maine Coon, actually. One thing she isn’t, though, is friendly. She’s not aggressive, just wants everyone to leave her alone. And she wants to be the only cat in the house, on account of her HATING cats.

So when Rose came home, well, that went over like a turd in a punch bowl, lemme tell ya.

The cats still don’t eat in the same part of the house, which is the way Hattie wants it. The poor old girl has been having such a rough month, what with the presence of that disgustingly adorable furball, so I thought she might want to try the wet Nutrish for Cats as a special treat.

OMG, y’all. SHE PURRED WHILE SHE ATE! She doesn’t purr, as a general rule, and she dang sure isn’t going to purr while eating…how undignified would that be?! But alas, she did just that, and she didn’t even look up from the plate once until it was completely licked clean. So, um, yeah…gonna call that one a WIN!

Currently Reading: Thrive and Start

I received a complimentary copy of Thrive from Blogging for Books for this review. My copy of Start came from the library. All thoughts and opinions are my own, as always. 

So I guess I’m going through a “books with one word for titles” phase, since the two books I’ve been oscillating between are Thrive and Start (and can we just acknowledge for a moment that I’m reading TWO books at once…I used to only read one book a year, people! ).

Thrive is a highly lauded work by Arianna Huffington, of Huffington Post fame. I am consistently drawn to books by women who have achieved some notable degree of professional success as I try to understand just how in the heck they did it. Most days just getting a shower seems to be a goal out of reach, so building and leading successful companies, or launching a start-up can seem rather bewildering to me, as much as I have a taste for working on my own and crave more of it for my future.

Let me just tell you this: I only made it through 3/4 of the book. I tried you guys, I REALLY tried. But at the end of the day, I found it just a bit too far away from my own reality. It felt very “heady” for lack of a better term, and there was a season of my life where I would have devoured the book due to it having interesting study after study referenced, and due to the near constant barrage of sage advice from the ancients and even from more modern wise men and women. When I was in graduate school, and when I didn’t have two small kids underfoot, I could read these thought-provoking sections and engage in a sort of dialogue with the author, scribbling down my own thoughts and questions that they brought to light. And if you have the time and space to do that, then I think Thrive is a worthy read, truly.

As for me, right now I need the little astute nuggets of truth to be already chewed (and hell, even partially digested) for me. And I need you to give me the point in simple terms. And then do it again, and then again. Because then it has a reasonable chance of sticking. As I glossed over gemstone after gemstone of intriguing thoughts, universal truths, and shrewd wisdom, all I kept thinking was, “What a shame. This is all lost on me because I’m reading this while my youngest is hitting me over the head with her (please God let it be clean) diaper.”

Thrive, for me, was just too much, plain and simple. And plain and simple is what I need right now. The irony also wasn’t lost of me that the chief message in the book, at least to the extent that I could glean it, was about slowing down, simplifying, and enjoying the simple things, because in the end, that’s really all there is. But that simple message was very convoluted, at least for me.

So the other book I’m reading is Start by Jon Acuff. This was recommended to me by several fellow business women and entrepreneurs, and while some may find it to be almost too basic of a read, I found myself DELIGHTED by its conversational tone and simple messaging.

Jon is a motivator and a fire starter, for sure. He leaves you wanting to turn the page and read more, but he also writes in such a way that when you need to put the book down to go scrape Play-Doh out of the carpet, you can do that, too. As someone who has a lot of half-baked ideas about things I want to do as my own boss, Start left me feeling encouraged to do something, ANYTHING, about them, and to stop using the excuse that since I can’t do it all (and I most definitely CAN’T do it all right now) then I shouldn’t try to do any of it. That’s just silliness, but I needed help to see that.

So in short, these are both great reads in their own right, but Start is speaking to me more right now.  Oh friends, I’d love to write more about it, but my youngest is currently screaming like her leg is being amputated (in reality, her father is removing a Band-Aid). Season of life, indeed!

A Clean Eating School Lunch Idea (Including Clean Hands Afterward!)

I still have two more weeks until my oldest is in kindergarten, and therefore, in school from 8-3 every day. That’s just 14 more days that I have to get my list of lunch ideas jotted down for quick and easy reference before each shopping trip, and every morning while making her lunch.

Ok, time for a moment of self-analysis: I’m making theses lists in a desperate attempt to try to control something, while watching my kids grow up and time marching on. I simply can’t slow it down, try as I may. I’m struggling with this kindergarten business much more than I struggled with turning 30 (I actually rather enjoyed that year!). And perhaps I’ll really enjoy this first year of Darah being in school for such long stretches, if I just give it the chance. I think that’s easier said than done, but however it goes, I’m gonna have some good lunch ideas, dang it!

I actually created a clean eating version of the ready-made lunches you can find in the refrigerated section of stores and will be sharing exactly what I put inside the kit in just a bit. It turned out great!

How to Replicate the Wet Napkin

Speaking of “clean” eating, the other thing I’ve been contemplating is how to replicate Darah having a wet napkin with her meals. This is something she has become quite used to at home, and I think every family has little idiosyncrasies that seem perfectly normal because you are used to them, until you step back for a moment and realize that it is actually rather unusual. Well, our kids get damp napkins to help them wipe their faces and hands with pretty much every meal. Anyone else out there do this?

I was originally thinking that I’d need to buy the canister of Wet-Naps and just pack them in a little plastic baggy for her each day. Seemed a bit wasteful, but I what other option did I have?

Oh wait! Wet-Nap packettes exist and they are PERFECT! These are individually packaged which make them ideal for many situations, including cleaning up after lunch. I used the Wet-Nap coupon (55 cents off, while supplies last)  to snag these at Walmart  for a great price. If you haven’t tried any Wet-Nap products in a while, they have made some improvements so that they are softer, yet stronger. They also include aloe to help moisturize the skin. Good stuff!

Where to Find Wet-Nap Products

I actually had a bit of trouble locating these in my Walmart, so I thought I’d let you in on exactly where I found them. Check the section near shampoo and conditioner that has other baby and feminine care products. That’s where I found mine! Other folks reported finding them in the napkin/paper goods aisle, which is where I looked first, but they were not there in my store!

Clean Eating Lunch Kit

Ok, so let’s break down what I found at Walmart to replicate those popular pre-made lunch kits (you know the ones…). To make it more in line with clean eating, I was looking to avoid artificial ingredients as much as possible, High Fructose Corn Syrup, enriched grains, pesticides and nitrates. I had a lot of success!

I used a pre-divided container just to give it more of that “lunch kit” feel, but of course that isn’t necessary. Use what you have, my friends!

I started with the fruit. I chose cantaloupe because my Walmart has a more limited selection of organic fruits, and canatloupe is on the “Clean 15” list, so pesticides aren’t as big of a concern for this conventionally grown product. Other options that aren’t organic would be kiwis, mangoes and bananas. Otherwise, try to get organic if at all possible.

I next added a sweet yet sensible treat. In this case I chose Somersaults because they do not contain enriched wheat or HFCS. I put them in a cupcake liner, just as I did with the fruit, so that they would stay separated.

For the drink, I decided to juice up Darah’s water, but just a touch. I found some organic pineapple juice (which tastes divine, but was definitely not cheap…hmph). I poured about 15% juice and made the rest water, and then added the mixture to a stainless steel cup. She’s used to water, and she’s used to watered-down juice, so I think she’ll like this just fine.

Now it’s time to make the meat, cheese and cracker combo! I couldn’t find the particular brand of crackers that I was hoping to buy, but I did find these whole wheat crackers from Carr. They were on the pricey end, but I liked their size. I used the cracker as my guide for how large the meat and cheese should be. And then I scoured the cabinets to find something that I could use to cut them to that size. I did eventually find something (though I was starting to sweat it, a bit!) and now I’ve got my go-to meat and cheese circle maker! :-).

When you are shopping for the meat, it’s really important to read your labels and look for the absence of nitrates. Most deli meats contain them, so start your search by looking for something that says “no preservatives” on the front as your starting point. As for the cheese, I looked for organic cheese first, and having not found any, I started looking for cheese with as few ingredients as possible, and no food coloring. The no food coloring bit wiped out all the “orange” cheeses immediately.

Gotta Keep ‘Em Separated

Once again, you’ll want to keep the crackers in a separate area from the meat and cheese, or else your kid will have soggy crackers by the time lunch rolls around. Besides, getting to build the little “sandwiches” is part of the fun!

Clean Up Time!

And of course, we can’t forget the Wet-Nap packet. It fits nice and neat in between the fruit and dessert. I realized after my creation was complete that there was room for a baby carrot or two, as well. Next time!

While choosing cleaner ingredients for this lunch kit does make it more expensive than it might be otherwise, the price still hovered right around $2.50, which is exactly what the more conventional kits cost. And honestly it didn’t take long at all to make. If you cut up your cantaloupe and your meat and cheese all in one setting for the week, which still only takes a few minutes, then putting lunch together each morning will be lightning-fast.

Tip to Make Errands Easier: Purchase Everyday Essentials Online (Walmart Gift Card Giveaway!)

When I go shopping, some of my least favorite items to buy are paper towels and toilet paper because they take up SO much space in my cart, and in my trunk. And that’s why I REALLY love to just order them online and have them shipped straight to my front door.

Did you know that places like Walmart.com make it really easy and affordable to do just that? At Walmart.com, for example, you get FREE shipping on purchases of $50 or more. And the prices you see online are, at least in my experience, the same as what you’ll find in the store. So what I do now is place a large order for everyday essentials to get free shipping and to get these items checked off my list for some time.

I also picked up some laundry detergent. Detergent doesn’t necessarily take up too much space in my cart, but man it’s heavy! No need to tote it all over the store, anymore!
