Smoky Mountains Weekend Getaway at Hidden Mountain Resort (GIVEAWAY!!!)

Over the last week I’ve shown you fun things to do in Sevierville, as well as great places to eat in Sevierville. Now I want to show you THE place to stay during a trip to the Smoky Mountains.

Let me introduce Hidden Mountain Resort. This is a glorious little community of cottages and cabins in a remote area so that you feel far away from the hustle and bustle of daily life. And yet, I was also very pleasantly surprised that I could reach the main drag of Sevierville and ALL that fun stuff to go see and do in just 5 minutes flat. Hidden Mount Resort homes are perfectly situated to give you the best of both worlds: seclusion and easy access to all the fun!

We stayed in cabin #4129, Mountain Dove (every home has a fun name, which I love!). When we arrived my husband and my in-laws, who were traveling with us, were positively SHOCKED at how gorgeous this home was. I was honestly a little confused by their dismay, and then I learned that their assumption was that staying in a “cabin” would be rustic and perhaps even mildly uncomfortable.

Clearly they didn’t get the memo about what Hidden Mountain Resort homes are like! I suppose I had the advantage because I visited the website before we went. I knew it was going to be spectacular! 🙂

I just can’t say this enough, friends: if you are traveling with kids or with a larger-than-average group (such as having your in-laws with you) then staying in a house is leaps and bounds more comfortable than staying in a hotel. And you just might be shocked by how comparable the cost is to having to book a few hotel rooms. This particular cabin rents for $350/night. It has 3 bedrooms. If you had 2 different families splitting the bill, that would be $175/night per family and instead of having to hole up in a tiny room, you have an entire GORGEOUS home. It’s honestly a no-brainer!

My children had an absolute blast exploring all the fun that there is to be had in Sevierville. But they also made a point of asking to “go back home” and they weren’t talking about Chattanooga…they were talking about Hidden Mountain!

As for the grownups, we enjoyed getting to have some time to relax in the hot tub on the deck, and of course, we made good use of the fire, which was gas and turned on with the flick of a switch!

Our Hidden Mountain Resort home was very spacious, very pristine, and very comfortable. Everyone had plenty of room to stretch out and relax. And while hit up quite a few restaurants on our particular trip, the next time we come to Hidden Mountain (oh trust, there will be a next time!) we’ll make use of the kitchen, which will actually help us save money on the vacation and ensure that we have food on hand that our little picky eaters will actually eat. 🙂

I also loved that while I had all of the benefits of staying in a house on this vacation, I ALSO had some of the benefits you expect when you stay in a hotel, such as 24 hour front desk service and the ability to switch out my linens if I so desired. The house also had a washer and dryer. Laundry wasn’t on my intended list of things to do during the weekend, but my youngest had a potty accident (such is life with a toddler, right?!) and boy was I glad to have that machine on hand so that I didn’t have to haul stinky, dirty laundry back home with me. Imagine how useful that would be for week-long vacations, too!

We absolutely LOVED our stay at Hidden Mount Resort. They have many different cabins at various price points and of various sizes to accommodate a wide variety of budgets and needs. I can’t wait to go back.

And true story: just this morning I was reminiscing with my kids about our trip to Disney World back in November. My oldest said, “Yeah Disney was fun, but when are going back to Sevierville and that pretty cabin?” Sevierville and Hidden Mount Resort, that is the highest praise from my daughter, who loves all things Disney with all of her heart!

January’s Beauty Box 5: Much Better!

If you aren’t yet familiar with Beauty Box 5, it is a very affordable beauty subscription service, with a fun mix of what I could call “drugstore” and higher end beauty products. Some things are full size, and some things are deluxe samples. It’s a good mix for the price, which is $12 if you go month by month, or if you go for a year at once, it’s $99, which makes each box $8.75.

There are so many gorgeous window treatments on this site, but my personal favorite is the Royal Glimmer Window Curtain. These are actually black out panels, which is very useful. They also just look like something you would spend $90/panel for. Loving that $30 price tag!

Yummy Super Bowl Face-Off: Buffalo Chicken and Bacon Wedge Salad with Naturally Fresh Bleu Cheese Dressing

You know, I’m not very interested in “the BIG game” that gets played in a few weeks’ time. I am VERY interested, however, in the commercials, the fun half-time show, and most of all, the food. Super Bowl food is all about going big or going home. It’s a fun opportunity to take your dishes to the extreme in the flavor department.

One of the most popular Super Bowl menu items is buffalo chicken wings. I have a confession to make about this particular dish: I only like it a little bit. As in, if someone else made chicken wings I would eat 1 or maybe 2, and the part I would enjoy the very most would be that awesome bleu cheese dressing. Most wings are just too hot for me to handle, and too messy for me, as well.

But when I learned that Naturally Fresh® had a lite bleu cheese dressing available, I honestly couldn’t stop thinking about it. I wanted to try it, and I wanted to create some sort of a recipe where the bleu cheese dressing could justifiably be eaten in large quantities. (What?! Don’t judge me until you’ve tried it!). So I knew that I needed to revisit the buffalo chicken wing issue and bring some heat to the table in a new way.

Ingredients

  • 1 1/2 lb bone-in chicken thighs
  • 1/3 cup hot sauce of your choice
  • 4 Tbsp butter
  • 1 Tbsp vinegar (white or go wild like me and use apple cider)
  • 1 tsp garlic salt
  • 1/4 tsp pepper
  • 1/4 tsp Worcestershire sauce
  • 1 head iceburg lettuce
  • 1 tomato
  • 1 package bacon
  • 1 jar Naturally Fresh Lite Bleu Cheese Dressing

In a slow cooker, add hot sauce, butter, vinegar, garlic salt, pepper, Worcestershire sauce and chicken wings. Place the slow cooker on low for 5 1/2 hours. After 1 hour, briefly open up the slow cooker and give the contents a good stir so that the sauce gets coated on the chicken. Return the lid and resume the slow cooking process.

Meanwhile, cook the package of bacon in whatever way you prefer to cook it. My style is to line 2 baking pans with foil, add the bacon, and cook them for 15-20 minutes (start watching at minute 15) at 400 degrees. After it cools down a bit it should be easy to crumble (you can always cut them up with kitchen shears!).

When the chicken is nearly done cooking, prepare your salad wedges. Simply cut your head of lettuce in half, and then cut each half again.

Now take your cooked chicken out of the slow cooker. Careful, as it is going to just fall off the bone. You want to remove any obvious bits of fat that remain, and of course remove all the bones. Shred the meat by using two forks. It will be easy-peasy. I recommend leaving the shredded chicken out of the slow cooker, but adding back to it approximately 1/4 cup of the sauce it cooked it to help ramp up the flavor a bit. You want moist, but not sopping wet shredded chicken.

Now it’s time to put it all together!

Simply place a wedge on your plate, and then generously drizzle it with that yummy Naturally Fresh Lite Bleu Cheese dressing. Look at those delicious chunks!

Add your tomatoes and your bacon, and then put the buffalo chicken around the edge. This makes it easy to grab a hunk of buffalo chicken each time you cut into your salad and take a bite.

While it takes a while to make the chicken, it is pretty much effortless and the end result is well worth it. I thought the chicken had some heat, but it wasn’t as intense as more traditional buffalo chicken wings. But the marriage between the flavor it had and the Naturally Fresh Lite Bleu Cheese dressing was perfect in every way! I ate this exact meal 3 times in a row after making it because I loved it so much! I probably would have kept going, but I ran out of wedges! 🙁

If you haven’t tried Naturally Fresh products yet, you are really in for a treat. These products are free of artificial flavors, colors or preservatives. They also leave out MSG and artificial thickeners. Truly they have captured the flavor of great, homemade dressings! And if you are wondering if the lite version of the bleu cheese is lacking (as lite dressings sometimes are) I can tell you that it doesn’t taste lite at all. The company uses a nonfat buttermilk to achieve that rich flavor without as many calories.

In addition to Bleu Cheese and Lite Bleu Chesse, the company also offers a Ranch and brad new to the scene this month, Lite Ranch (half the calories of the original!). You can find these products in the refrigerated section of the store at Kroger and Publix.

The Perfect Girl’s Valentine’s Day Dress for Maximum Comfort (It’s from FabKids, Of Course!)

Valentine’s Day is right around the corner (I believe it’s 34 days away!) and you may be looking for something special for the occasion for your kids.

And maybe you are also hoping to avoid something that is entirely pink and red. And itchy/uncomfortable in any way, too. I feel you…my youngest LOVES to wear dresses but you can just forget it if they aren’t super comfy. It can be hard to find dresses that are as comfortable as a shirt and pants, friends!

But FabKids has done it this month. They just launched the Pink Be Mine Outfit (though it is hardly head-to-toe pink). It is a simple silhouette in 100% cotton and there are not zippers or buttons, which Layah loves!

She wore it for the first time yesterday and she stayed in it the entire day. I’m sure some of you out there also have kids who love to change outfits multiple times a day, as mine do, so you can understand that staying in just one outfit from start to finish is actually a really big deal.

As you can see by the pose she chose to strike for me here, the dress is super comfy. I love the bright, bold colors; frankly it reminds me of the neon trend that happened around 1987 (remember that?) only much cuter.

How to Brighten Your Laundry: Honest Company Oxy Boost Review – An Honest Assessment)

Ok, so I’ve had Honest Company’s Oxy Boost in my laundry room for quite some time, and honestly, it took me a while to use it because I didn’t really understand why it was something I needed. I even went online to research more about it so that I could understand, and I thought I’d share that with you!

Reasons to Use an Oxygen-Based Brightener

So basically these oxygen-based brighteners on the market are meant to be an alternative to chlorine bleach, and at least in the case of the product put out by the Honest Company, this alternative is not only safe for whites, but also for colors.

It is also intended to be like a boost for your detergent. The Oxy Boost product from Honest.com will help destain, deodorize, whiten, color brighten and soften the water so that the detergent can really get to work.

So I’ve been opting to use it in my loads of whites to help them perk up a bit (and I’ve noticed a difference!) and I’ve also been using the product on any loads that have laundry with heavier stains in them, just to help ensure that they come out after one wash.

I don’t think this is a necessary product to have, but I do think it can come in handy. My family will probably take close to 6 months to get through the pack of 24, so this isn’t a product I will be ordering monthly. But with that said, when I do purchase it again I will be adding to my monthly bundle as an add-on rather than in one of the 5 bundle slots. Going Retro to Drop the Cords: Sol Republic Tracks Air Wireless Headphones

I can’t tell you the exact number of earbuds that Tim and I have purchased over the last decade. I’m guessing that it’s somewhere around 15. They are SO easy to lose, and they are also SO tempting to our cats, who love to chew right through those cords.

And honestly, these are the two reasons, and the only two reasons, why this trend of going back to over the ear headphones has piqued my interest. I think the sound quality from earbuds is outstanding, so it seems in some ways a little backwards to me to go back to larger headphones. But the cats won’t break them, they won’t be as easy to misplace, and the big advancement with these devices is that they have cordless capabilities as long as you have Bluetooth.

Cordless is the game-changer. And I’m so glad I gave them a try, because they are MY JAM, now. I’m using the Tracks Air from Sol Republic. These headphones are surprisingly light and not at all cumbersome to wear. I really thought I would find going back to larger headphones to be annoying, but the cushions around the ears are really soft, the sound is great, and the benefit of not having cords is HUGE.

Marie Callender’s Pot Pies for Dinner, and Pie for Dessert, Too!

Do your kids ever ask you if they can eat something that might be considered to be a special treat as the entire meal? My oldest has a detailed plan for what a 3 course meal made of chocolate might look like (there’s a chocolate fountain involved…it’s quite detailed!). Well today I thought I’d give my family a little surprise by making an entire meal out of pies. With a little help from Marie Callender’s you’ll find it is quite easy to do, and you don’t even have to give up the idea of a more balanced meal to make it happen.

I headed to Walmart yesterday to pick up the ingredients I needed for the meal. The pot pies were ready to go in the frozen meals section of the store.

Oh what a saving grace prepared foods can be for busy families! I have had my share of pot pies over my 34 years on this planet, and in my opinion, the very best out there are from Marie Callender’s. Specifically, my family LOVES the creamy parmesan chicken pot pie. Have you tried it? I’ve actually made pot pies from scratch before, and I am of the opinion that the made-from-scratch pot pies from Marie Callender’s taste better!

Marie Callender’s pot pies can be microwaved in just a few minutes, but I personally like them best when cooked in the oven. Here’s a tip for you if you want to prepare them in the oven, too: place thin strips of aluminum foil around the crust of the pies. This step, which only takes a minute, keeps the edges from burning. The end result is a perfectly golden flakey crust!

Since the main course only required that I preheat the oven and put aluminum foil around the pie edges, my time was freed up to create another pie for our dessert. I decided to keep the Italian theme going and to try my hand at making a pie version of my very favorite Italian dessert: cannolis.

Cannoli Pie

Ingredients:

  • 16 oz ricotta cheese
  • 1 (14 oz) can of sweetened condensed milk
  • 1/3 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 cups miniature chocolate chips
  • 1 (9 inch) pie crust, thawed

Mercy this pie is an easy one, and I can’t say that I mind! The entire meal feels nearly effortless, even with a dish that is homemade! I opted for a pre-made pie crust to make things as easy as possible, so if you are doing the same, be sure to give it some time to thaw (trust me…I tried to force the first pie crust to unroll while it was still frozen and the result was a big mess I had to throw out). Go ahead and preheat your oven to 375 degrees, as well.

In a large bowl combine ricotta, powdered sugar, condensed milk and vanilla extract. Give it a good stir until it is well-combined and smooth.

Now it’s time to add in the chocolate chips! Don’t forget that it’s important to get the miniature chips…that’s more consistent with the cannoli look and feel.

Once you’ve got the chocolate chips mixed in well, simply pour it into your prepared pie shell and pop it into the oven for 30 minutes.

At the 30 minute mark, I actually took the pie out and used the same aluminum foil trick mentioned earlier around the edges so that they wouldn’t burn. I then returned the pie to the oven to continue cooking for another 25 minutes. You’ll want to watch for the middle to be set. You can cook the pot pies on the lower rack in your oven at the same time as your cannoli pie, FYI. That what I did!

The cannoli pie needs to cool entirely before you cut into it. I know, I know…it is painful to have to wait! But good news, friends! You can dig right into your Marie Callender’s pot pies in the mean time!

Remember, the box is $12 for an individual box, but you can get 12 boxes (1 each month for a year) for $99, which is a great deal! That makes it just $8.25/box, and I think that’s a fair price for a little bit of beauty fun in your mail each month. I still like the box even though this box didn’t wow me.
